Kale Pomegranate Salad

  • 4 cups kale, stems removed and chopped
  • 1 avocado, diced
  • 1 cup cooked quinoa
  • 1/2 cup pomegranate seeds
  • 1/4 cup chopped almonds
  • 1/4 cup crumbled feta cheese (optional)
  • Salt and pepper, to taste

For the dressing:

  • 1/4 cup olive oil
  • 1/4 cup apple cider vinegar
  • 1 tablespoon honey
  • 1 teaspoon Dijon mustard
  • Salt and pepper, to taste


Begin by washing and drying the kale leaves, and removing the stems. Chop the kale into small pieces and place them in a large mixing bowl.

  1. Add the cooked quinoa to the bowl with the kale. Mix well.
  2. Cut the avocado in half, remove the pit, and dice the flesh into small cubes. Add the diced avocado to the bowl with the kale and quinoa.
  3. Sprinkle the pomegranate seeds and chopped almonds over the top of the salad.
  4. If desired, sprinkle crumbled feta cheese over the top of the salad.
  5. In a small bowl, whisk together the olive oil, apple cider vinegar, honey, and Dijon mustard. Add salt and pepper to taste.
  6. Pour the dressing over the salad and toss well to combine.

Serve immediately or chill in the refrigerator for up to an hour before serving.
