Korean Boiled Pork (Pork Bossam)

Ingredients:

  • 2 pounds of pork belly, skin-on
  • 2 cups of water
  • 1 cup of soy sauce ,3 bay leaves
  • 1 cup of rice wine or dry sherry
  • 1 cup of brown sugar
  • 1 onion, chopped
  • 1 head of garlic, peeled and chopped
  • 2 teaspoons of ginger, grated
  • 1 tablespoon of black pepper
  • 4-5 green onions, chopped
  • Lettuce leaves, washed and drained
  • Ssamjang (Korean dipping sauce made of fermented bean paste, chili paste, and other ingredients)

Instructions:

  1. Rinse the pork belly under cold water and pat it dry with paper towels.
  2. In a large pot or Dutch oven, combine the water, soy sauce, rice wine, brown sugar, onion, garlic, ginger, and black pepper. Stir well and bring to a boil over high heat.
  3. Add the pork belly to the pot, skin side up, and reduce the heat to medium-low. Cover the pot with a lid and simmer for 1 to 1 1/2 hours, or until the pork is tender and fully cooked.
  4. Remove the pork belly from the pot and let it cool slightly. Slice it into bite-sized pieces and arrange them on a serving platter.
  5. Garnish the pork with chopped green onions and serve with lettuce leaves and ssamjang. To eat, take a lettuce leaf, add a piece of pork, a dollop of ssamjang, and wrap it up like a taco.
