Squid kimchi pancake(Kimchijeon)

Ingredients:

  • 1 cup of squid, cut into small pieces
  • 1/2 cup of onion, thinly sliced
  • 1/2 cup of kimchi, chopped
  • 1/4 cup of potato starch
  • 1/4 cup of all-purpose flour
  • 1 egg
  • 1/2 teaspoon of salt
  • 1/4 teaspoon of black pepper

  • vegetable oil for frying

Instructions:

  3. Heat a non-stick frying pan over medium-high heat. Add 1 tablespoon of vegetable oil.
  4. Scoop a spoonful of the batter onto the pan and spread it out into a small pancake. Cook for about 1-2 minutes until the bottom turns golden brown.
  5. Flip the pancake and cook the other side for another 1-2 minutes.
  6. Repeat until all the batter is used up, adding more oil to the pan as needed.
