Avocado Panini

  • 2 slices of bread (sourdough, whole wheat, or your preferred bread)
  • 1/2 ripe avocado, sliced
  • 1/2 tomato, sliced
  • 4-5 mushrooms, sliced
  • A handful of fresh basil leaves
  • 2-3 slices of fresh mozzarella cheese
  • 1 tablespoon olive oil
  • Salt and pepper


  1. Preheat a panini press or a grill pan.
  2. Brush one side of each bread slice with olive oil.
  3. On one slice of bread, layer the avocado, tomato, mushrooms, and basil leaves. Season with salt and pepper.
  4. Add the mozzarella cheese slices on top.
  5. Top with the other bread slice, oiled side facing up.
  6. Place the sandwich in the panini press or grill pan.
  7. Cook for 3-4 minutes until the bread is toasted and the cheese is melted.
  8. Remove from the panini press or grill pan and let cool for a minute or two.
  9. Slice the panini in half and serve hot.
